Calzone

Recipe

Dough:
Atta/godumai maavu - 2 cups
Whole wheat flour    - 1 and 1/4 cup
Active dry yeast        - 2 and 1/4 tsps
Lukewarm water       - 1 and 1/2 cup
Sugar or honey          - 1 tbsp
Oil of choice              - 1 tbsp
Salt.                            - 1 tsp

Filling:
Shredded carrots                                        - 1/4 cup
Chopped cilantro                                       - 1/4 cup
Soft crumbled paneer/cottage cheese         - 1/2 cup
(I used home made paneer from sour milk)
spices of choice - I used turmeric powder,coriander/red chilli powder mix,ginger powder
Salt to taste

Combine all ingredients to make a smooth dough. Place the dough over a floured surface and knead for about 2-3 minutes.Let it rest for a few minutes. Pre-heat oven to 375 F.

Prepare the filling by combining all the ingredients. The consistency of the filling should be dry.

Divide the dough into equal sized balls( about 4-6).Roll each ball with hand or rolling pin into 8 inch diameter.Place them on floured/greased baking sheets or parchment paper.Brush a little oil on each of the rounds and spread the filling on one half of each round. Fold the other side over the filling and lightly press it to seal.
Brush the tops with a little oil/ butter and sprinkle some sesame seeds over it. Poke a small hole on the top of the calzones to avoid the contents from bursting out while baking.

Bake for about 20- 25 minutes until the surface is brown.
You can turn them over after about 10 minutes to ensure even cooking on both sides.

Instant Vegetable Quinoa idlis

Recipe

Quinoa                             - 1/2 cup
Cracked Wheat                - 1/2 cup
yogurt (curd, thayir)         - 1 cup
Chopped Almonds           - 2 tbsps
Thippili( pepper)              - 4
Canola oil                         - 2 tbsps + 1 tsp ( for mustard seeds and greasing the idli plates)
shredded carrots
and chopped cilantro         - 1/2 cup
Asoefatida                        - a pinch
mustard seeds                   - 1/2 tsp
turmeric powder               - 1/4 tsp
Salt to taste

Toast Quinoa and dry grind it as fine as possible or as fine as the cracked wheat you are using. Dry roast cracked wheat. Toast the almonds and the thippili. Powder the thippili. Mix the all the dry ingredients except the mustard seeds. To this add the chopped cilantro, shredded carrots, canola oil and the yogurt. Mix them well to a idli batter consistency.
Keep it aside for about 15 - 20 minutes. Heat 1/4 tsp oil and splutter the mustard seeds and add it to this.
Grease idli molds with oil and pour about 1- 2 tbsp in each. Steam for about 15- 20 mins or until done.

Pav buns(Pav Bhaji bread)


This Pav bun was done by Mahesh(my husband) a year ago, just found the photos and recipe instructions so posting it.

Recipe

Whole Wheat Flour( atta or godumbai maavu) - 2 cups
Maida(All purpose flour)                        -  1cup 
Milk (paal)                                             -  1 cup
Water                                                      -  1/2 cup
Salt                                                          -  1 tsp
Sugar                                                       -   1 tsp
Yeast                                                       -   1 tsp

For Coating the buns

Oil/milk mixture with desired spices.

Mix all ingredients together.







15 minutes later


Punch down dough and roll into balls as shown below.

Let it rise for an hour and coat the buns with a mixture of milk/ oil with spices.


second rise(after about an hour)  - and coated with a mixture of oil and milk with desired spices!

Bake the rolls at 400 f for about 20- 30 mins until golden brown. moisten in between with the oil/milk mixture to maintain softness of the bread.

cardamom powder      - 1 tsp
Canola oil                   - 2 tbsps
Active dry yeast         - 1 tsp
Lukewarm water       - 3/4 cup
Arrowroot Powder    - 2 tbsp
Salt to taste

Mix all ingredients together and knead well for about 10 minutes. Roll into balls and keep in a warm place for few hours until it doubles.
Bake in 400 F for about 15 minutes.

paruppu idli

Recipe

Urad dal                                                 -   1/2 cup
Split Moong dal (with or without skin)  -   1/2 cup ( have tried both)
Fenugreek seeds
Salt

Soak the above ingredients for 2 or 3 hours.
Then grind in blender into a batter and let it rise overnight. Add salt and pour in idli plates and steam until cooked well. You can add grated vegetables before pouring the batter on the idli plates.

Almond oat crackers

Almond Oats crackers

A modification of this recipe

Old fashioned or slow cooking oats - 1/2 cup
Sliced Almonds                               - 1/2 cup
Dates                                               - 5
Cumin seeds                                   - 1/2 tsp
Thippili(a kind of black pepper)     - 2 small ones (http://en.wikipedia.org/wiki/Long_pepper)
sesame seeds                                  - 1 tsp
Oil ( I used Canola)                       - 2 tbsp
Salt to taste
Water/almond milk/soy milk       - to bind the mixture

Powder the oats, almonds, Spices to a fine powder as possible. add the dates to this and grind until all blend. Place the mixture in a bowl and add the oil and few tablespoons of water or milk of choice to bind everything to a dough. Refrigerate for 30 mins.

roll it out to 1 inch thickness between 2 parchment papers. Cut it into desired shapes
and bake for about 15-20 mins at 350 F.

Corn Bread


Ingredients

Corn grits - 3/4 cup
All purpose flour - 3/4 cup
Oil- 1/2 cup
Yogurt/curd - 1/2 cup
Salt to taste
Baking powder -1/2 tsp
Spices( turmeric,red chilli powder)
Chopped carrots, cilantro( coriander leaves)




Mix dry ingredients together, chopped vegetables and mix well. Then add the Curd and the oil to liquid batter consistency(dosa batter).


Pour in a greased baking dish and bake at 400 F for about 30 minutes or until a toothpick comes out clean.
