CORN BREAD

Equal amounts of yellow or white grits and Whole wheat flour( can use atta or maida) (I used 1:1)
a pinch of salt
1/2 tsp baking soda
1 tsp baking powder
pinch of turmeric
shredded cheese
chopped coriander leaves(cilantro)
chopped green chillies(optional)
black pepper powder(optional)
ginger powder(optional)
curd/yogurt - 1 1/2 to 2 cups
1-2 tsp oil

Mix the dry ingredients, cilantro, green chillies, shredded cheese.
Then add the yogurt and mix it well to cake like/idli like batter( not too runny or too thick).Let it set for half hour.
grease a baking pan with oil.Add chopped nuts( I used pecans) and shredded cheese at the bottom of the pan. Pour the batter into the pan and
bake at 475 F for 30 minutes or until toothpick comes out clean.
It wasn't too soft, you can add a little more yogurt if you need it softer.

Blackberry jam

Blackberry jam made this weekend. Turned out a little lemony but tastes good. Our 2 yr old son liked it.

I used about 3 cups of blackberry(mashed)/3 cups sugar and juice of limes.
Cooked in high heat for about 15- 20 minutes and then in low heat until it came to a jam consistency.

How to make ''Carrot Halwa''


You will need :
  • 4 (large) Carrots
  • 2 tbsp Ghee , Also known as clarified butter
  • 2 glass of Whole milk
  • 8 tbsp Caster sugar
  • 1 tbsp Golden syrup
  • 3 Green Cardamom pods
  • 10-15 almonds (cut it into pieces)
  • Saffron (1 pinch)
  • Vegetable scraper
  • 1 large Frying pan
  • 1 Wooden or metal stirring spoon


    Step 1: Grate Carrots

    Grate the carrots and set aside.

    Step 2: Melt The Ghee & Mix it well with Carrot

    In a deep frying pan, and on a low heat, add the Ghee (clarified butter) and once this has melted, add the almond pieces, fry it and add the grated carrots and mix Almonds, Ghee and the Carrot well, until it has softened slightly and is well coated with the Ghee (clarified butter). Ensure the carrot does not burn or stick to the pan by stirring constantly.

    Step 3: Add milk, stir and heat

    Now add the whole milk and stir into the carrot mixture. Cook on a high heat until the liquid starts to boil. Then reduce the heat to allow the mixture to simmer on a low heat for 10 minutes.

    Step 4: Stir and Heat

    Keep stirring frequently whilst cooking on a low heat for more 15 minutes.

    Step 5: Add Saffron, kesar (for colour & flavour)

    When the milk content has reduced to less than half the original amount, add the saffron and stir in. Continue to allow the mixture to cook on a medium heat and stir constantly

    Step 6: Add sugar

    Once the milk content (liquid) has reduced to 85%, add the caster sugar and the Cardamom seeds and stir into the mixture. ( its upon your like, semi solid or a solid type)

    Step 8: Serve

    Place the mixture in a bowl and allow to set for a few minutes before releasing them on a serving plate, then serve warmed and with an accompaniment of ice-cream.
